The University of Maryland is taking a Thanksgiving holiday. Maryland Today will resume daily production (weighing several pounds) on Monday, November 29.

Food service chefs offer unusual recipes to try this year

Perhaps your favorite is buttered mashed potatoes, stacked on your plate, as a bed for everything else on the Thanksgiving table. Or the turkey leg you can't wait to nibble on, just like you are at the Renaissance Festival. Or all you want is dessert: pumpkin pie, apple pie, sweet potato pie—any slice that can put you into a weekend food coma.

But when you’re ready to party with friends and family after the holiday interrupted by the pandemic last year, Michael Norman, executive chef of the University of Maryland’s Food Services Division, wants you to consider a more Maryland-themed meal at the Thanksgiving table.

"As an implant from Louisiana, my tradition has changed with my childhood and adult experience in this area," said Norman, who will make the following two dishes this week.

He offered two recipes — one of which is a staple of Maryland, Old Bay Seasoning — for trial on Thursday.
